I often see wonderful soups on the shelves at Trader Joe’s and Whole Foods, however it doesn’t seem like a plain soup would make a great meal.  Here I’ve taken a box soup, added some veggies, and created some dumplings for a really hearty dinner.  If you don’t have a Trader Joe’s or Whole Foods nearby or can’t find these ingredients, don’t be afraid to improvise… cooking doesn’t have to be a fine science.  This is a quick and easy prep recipe.  Enjoy!

What I used:

  • 2 containers of Trader Joe’s Creamy Corn and Roasted Pepper Soup
  • 1 pkg of Trader Joe’s frozen fire roasted bell peppers or melange a trois, thawed
  • 1 pkg of Trader Joe’s frozen roasted corn, thawed
  • 1 onion, chopped
  • 1 large clove garlic, chopped
  • 1/2 pkg of Trader Joe’s veggie chorizo
  • Chili powder, cumin, salt to taste
  • 1 tube Trader Joe’s polenta

To prepare:

  1. Slice tubed polenta about 1/2-inch thick, then cut each slice into fourths.  Grill on each side till browned.  I used my George Foreman grill.  You can use a pan, oven, etc.  Set aside.
  2. In a large pot, saute onions and garlic till soft.
  3. Add in soup, thawed veggies, chorizo, and simmer for about 20 minutes or more.
  4. Season to taste with chili powder, cumin, salt.
  5. Stir in the dumplings right before serving and place a few atop each bowl.
  6. You can serve with sliced avocado, soy sour cream.

Please Pass the Tofu for this delicious pie that’s easy to make with a few simple ingredients.

What you need:

  • 10 oz bag vegan semisweet chocolate chips
  • 1 12.3 oz. shelf-stable firm silken tofu (Trader Joe’s now carries their version of this)
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1 cup raspberries, fresh or thawed frozen
  • 1/2 cup confectioner’s sugar
  • 1 9-inch vegan graham cracker pie crust

To prepare:

  1. Put chocolate chips in a microwave-safe bowl and microwave until melted; set aside.
  2. In a food processor or blender, blend tofu till smooth.
  3. Add in the chocolate, maple syrup, and vanilla and blend.
  4. Add in raspberries and confectioner’s sugar and process till smooth.
  5. Spread in pie crust and refrigerate for at least 2 hours or overnight till firm.
  6. Top with more raspberries, or make a raspberry topping by cooking a handful of raspberries and a little sugar in a frying pan.  Top with vegan whipped cream such as freshly whipped Mimic Creme if desired.

If you like sloppy joes, this version is delicious and has a kick.  Made with three convenience ingredients and made in the microwave or skillet, this can be made in minutes!  Serve on a vegan roll with a thick slice of onion or even make a taco salad with it.  If you’re not a big fan of spice, use a mild salsa.  Don’t have a Trader Joe’s nearby?  Just substitute the ingredients for different brands.   Have fun, improvise, and enjoy 😀

What you need:

1 pkg Trader Joe’s Steamed Lentils

1 pkg Trader Joe’s Soy Chorizo

1 jar of Trader Joe’s Autentica Salsa

To prepare:

  1. Combine all ingredients.
  2. Either put in a microwave-safe bowl and heat till warm or warm in skillet

Approximately 8 servings, about 1/4 cup each.  Weight Watchers Points Plus value: 4 

I say approximate because you can really use a couple of tbsp on each sandwich and get double the servings and half the points, a little goes a long way with this stuff.

I’ve been on a little bit of  a breakfast kick since I read an article about breakfast ruts, maybe it was Weight Watchers Magazine.  After last week’s Portobello Benedict, I decided to create a vegan McMuffin, so here it is.  I hope you like it.

What you need:

What to do:

  1. Drain tofu and slice into six thick slices.
  2. Put oil in a large skillet and fry tofu till golden on each side; season with salt and pepper.
  3. Toast the English Muffins.
  4. Assemble the McMuffins by spreading each sandwich with 1 tbsp cheese spread, a slice of Canadian bacon, a tomato slice, and top with tofu slice.
  5. Season to taste.

6 servings.   Weight Watcher Pointsplus value: 7

Craving fries?  This is a much a healthier version that’s super fast and easy.  I used a bag of pre-cut and peeled sweet potatoes from Trader Joe’s for this which made it so quick, but you can use whole ones and prep them yourself.  If you didn’t already know this, sweet potatoes are rich in Vitamins A and C.  Enjoy!


  • 1 bag Trader Joe’s peeled and cut-up sweet potatoes
  • nutritional yeast flakes
  • vegan bacon-flavored salt
  • olive oil cooking spray
  1. Spread potato on a microwave safe plate.
  2. Spray with olive oil spray.
  3. Sprinkle with nutritional yeast and bacon-flavored salt.
  4. Microwave for about 5 to 8 minutes.
  5. Serve with BBQ sauce.

Your microwaving time may vary so please check potatoes during cook time.

It’s getting late and you need to cook.  I always try to have on hand some Trader Joe’s Curry Simmer Sauce (it’s vegan, but the masala is not).  Chop some veggies and simmer while the rice is cooking.

Saute in a nonstick skillet:

  • 4 zucchini, cut longways and then sliced into half moons (eggplant is good too)
  • 1 sweet onion chopped
  • 1/2 cup chickpeas, canned, rinsed and drained
  • 1 small baked potato, peeled, and cut into chunks

When veggies are look slightly tender, add 1 jar of TJ’s simmer sauce and simmer following package instructions.  Serve with rice.
