The most delicious and easy-to-make vegan French toast!  My daughter works at a Japanese grocery, and one of her coworkers told her how he  makes french toast for his vegan girlfriend.  It uses fried soybean/tofu cakes found at Asian markets.  Because of the tofu, this is a very filling french toast.  This would make a great breakfast for guests.  I hope you enjoy it as much as I did.

Ingredients:

  • 2 fried soybean/tofu cakes
  • 2 tsp agave nectar
  • dash or two of cinnamon
  • 1 banana

Recipe:

  1. In food processor, blend agave, cinnamon, banana.
  2. Cut each tofu cake into 4 strips  (I left them whole and cut after cooking, but I would cut them in strips next time).
  3. Coat strips in mixture.
  4. Spray nonstick pan with canola spray and cook tofu till brown on all sides.

Serve each portion with 1/2 tbsp maple syrup and 1/2 tbsp light margarine (add 1 point) and serve hot.

Add some fruit and you have a very nice breakfast.
