Teresa Lindsey, Seattle Eastsider, vegan since 2005, serial knitter, causal cyclist, and Korean drama addict. I enjoy wonderful vegan food, recipes, restaurants.
You wouldn’t know it, but I don’t love cooking. However, I love to eat good vegan food. I rarely eat out and I cook just about every night. That’s why my recipes are pretty simple and quick to make. I’m a recipe modifier. I veganize non-vegan recipes and Weight-Watcherize vegan recipes, but every now and then I come up with one that is completely my own.
My blog is pretty streamlined. I hate reading food blogs that are wordy and long. I just want to get straight to the point…the recipe! And I don’t want to overload everyone with tons of recipes every day, so I blog once a week on Meatless Monday. Occasionally, I’ll post one from the archives to FaceBook or Twitter later in the week.
I started blogging because I have very few friends that are vegan or vegetarian, and I don’t like jumping up and down in the kitchen alone when I find a great recipe, so this is my outlet and way of connecting and passing along some great recipes I’ve modified from cookbooks, cooking shows, the internet, and real live people. It’s also a great way to answer the annoying question of What do you eat? It gives me great pleasure to say, “It’s all on my blog.”
Wondering why my tagline is testing vegan recipes one pink plate at a time? When I had to renovate my tiny kitchen due to a bad water leak, I redid it in my favorite color, pink. I have pink plates too, thus the one pink plate at a time. Occasionally I will use an Asian-style soup bowl or some flea market china. I had one reader that commented on where the pink plate was one time!
I hope you find/found a recipe that you would like to try. I would love to hear from you.
Thanks for visiting,
